Grapefruit Poppy Seed Bread

Some people eat the same breakfast every day of their lives, I am not one of those people! So many choices, so little time! I dug through my bread cookbooks looking for an exciting change of pace and found this recipe filled with refreshing grapefruit zest and juice, wheat germ, fiber and poppy seeds. I believe that I've found a winner!

This is my take on the original recipe from, THE BEST BREAD MACHINE COOKBOOK EVER. (Today I found one of these cookbooks available on Amazon for only $3.98.)

Bread machine
GRAPEFRUIT POPPY SEED BREAD
Cut thick slices of this bread, spread with butter or cream cheese. Makes a tasty chicken or turkey sandwich. This recipe makes a 1 1/2 pound loaf.

INGREDIENTS
Add ingredients in the order they appear

    3/4 cup warm water + 1 tablespoon
2        tablespoons washed grapefruit zest
    1/4 cup grapefruit juice
1  1/2 tablespoons light olive oil or grapeseed oil
1  1/2 teaspoon salt
1  1/2 tablespoon sugar
    1/4 cup poppy seeds
3        tablespoons milk
    3/4 cup wheat bran
3        tablespoons wheat germ
2  1/2 cups unbleached bread flour
                    Or
2  1/2 cups Hungarian High Altitude Flour + 1 tablespoon vital wheat gluten
(Form a well in the flour and add yeast)
2  1/2 teaspoons active dry yeast

  • Add ingredients to bread machine bucket in order.
  • Set bread machine to Dough Cycle, 1:30.
  • Push dough down. On a lightly floured surface, form dough into loaf.
  • Place loaf in greased bread pan, cover and let rise for 1 hour.
  • Preheat oven to 350 degrees F. Bake for 24 minutes.
  • Cool on wire rack.
Shaped loaf in greased bread pan.


Covered with greased plastic wrap, let bread rise in a warm place.

Grapefruit Poppy Seed Bread is packed full of flavor, nutrition and loads of fiber. I love the way the poppy seeds burst in my mouth! This bread is moist and delicious and is fast becoming a regular around our house for breakfast . . . Over at Julie's!!!
