Sour Cream Blueberry Muffins

It's blueberry season here in the U.S. and that means great prices for a wonderful berry full of color and antioxidants, and blueberry muffins!

Years ago, Sam's Club sold a cookbook series called, WAKE UP & SMELL THE COFFEE, collected by Laura Zahn. Being a resident of the Arizona, I purchased the Southwestern Edition. This paperback book has been a delight because it not only has the best recipes, but also contains maps and information on many wonderful Bed and Breakfast Inns throughout the states of Texas, Arizona, and New Mexico!
The recipe I'm adapting comes from Wild Briar Inn in Edom/Ben Wheeler, Texas run by Inkeepers Max and Mary Scott. I have decreased the sugar and added lemon zest for a bit more flavor.

SOUR CREAM BLUEBERRY MUFFINS
These muffins are incredible with the streusel topping melted into sweet crunchiness!


1/2 cup butter, room temperature

1 1/4 cups sugar

1/2 teaspoon salt

4 eggs, room temperature

1 teaspoon nutmeg

1 teaspoon lemon zest

1 1/2 cups sour cream or use half plain yogurt

2 3/4 cups cake flour or all-purpose flour

1 to 2 cups fresh or frozen "dry pack" blueberries, optional

 

TOPPINGS

Sprinkle with sugar or make a Streusel Topping

1/2 cup flour

1/2 cup brown sugar

1/4 cup butter

Sprinkle over the tops of muffins before baking.

 

  • Preheat oven to 450F.
  • Prepare muffin tin using muffin papers or you'll have a mess!
  • In a large bowl cream butter, sugar and salt until light and fluffy.
  • Add eggs, baking soda, nutmeg, sour cream and flour beating well after each addition.
  • Gently fold in blueberries with a spatula.
  • Fill paper-lined muffin tins 3/4 full.
  • Sprinkle with sugar or streusel, I highly suggest the streusel for these muffins!
  • Bake in a preheated oven at 450F for 15 minutes.
 

This recipe makes 21 sour cream muffins. Adding 2 cups of blueberries will increase your number of muffins to 2 dozen.

So sorry . . . I didn't get a photo of the first dozen without streusel . . . they were inhaled by Will and the Grands . . . But the batter sitting in the refrigerator? The batter I'm cooking with the streusel on top? Will and I ate 2 muffins a piece hot out of the oven, slathered with butter! They embody everything a great muffin should have . . . Over at Julie's!!!

Oh my! The second batch, with streusel . . . to die for!!!
